This wine is a perfect blend of 96% Cabernet Sauvignon, 2% Merlot, 2% Cabernet Franc grape varietals.
Manually harvested, the grapes used for this 2002 White Oak Cabernet were and picked at optimum ripeness, then gently de-stemmed with a pre-fermentation maceration of 4-6 days.
The juice of the grapes was then allowed to ferment naturally in stainless steel vats for at least 14 days, pumped over twice per day, pressed, and transferred to barrels to allow malolactic fermentation to take place.
This delicate Cabernet was handled only minimally and bottled with light filtration allowing the true flavors of the fruits to come through.
With a long and concentrated finish, the 2002 White Oak Cabernet echos anise and coffee flavors making this wine excellent to enjoy alone or as delicious pairing with rich grilled meats.
